Malai Makai Saag ( Creamy spinach corn potatoes curry)


This is a wonderful creamy curry made with spinach, corn, potatoes and has a creamy base cooked in with Indian spices such as turmeric, coriander, cayenne, cinnamon, Garam Masaala, bay leaves, tomatoes, garlic, ginger, salt, pepper. It’s low in oil but does have some fat content due to cream. There is some sweetness from corn that balances the sour cream and makes it an absolute delight to eat. It’s north western Indian speciality from region of “Punjab”. Typically eaten in winter months there.

It’s gluten free. You can eat it as is or on top of rice or with naan. Warm in microwave for 1-3 min in microwaveable bowl or stove top in a pan for 2-4 min medium heat.
