This is a wonderful vegetarian curry made with in season mixed vegetables. This week it will contain peas, green beans, potatoes, carrots, sweet potatoes, cauliflower broccoli, corn, spinach and squash. The vegetables are cooked in with Indian spices such as turmeric, coriander, my own curry mix, cinnamon, coconut milk, garlic, ginger, onions. The creaminess comes from coconut milk, it’s vegan. There is a nice balance of spice and sweetness derived from sweet potatoes and carrots.
Serve this dish with rice or have it with naan. You can garnish it with chopped nuts, raisins and cilantro if you like before serving ( all optional) or enjoy the curry as is.
8 oz. Can be warmed in microwaveable bowl or on stove top medium heat in a pan for 2-3 min.
